Isabelle Tellier commented on her choices of food-champagne pairings for this festive gourmet menu:
“Tsarine by Adriana is a champagne blended in line with the Tsarine style, with perfect balance among the three Champagne grape varieties: 34% Chardonnay, 33% Meunier, 33% Pinot Noir. The sugar dosage of 12 g/l gives it a velvety feel, just on the borderline between brut and extra-dry, which favors its fruity notes.
For the entrée, I decided on foie gras in an innovative form: prepared in a warm soufflé. It makes a fine, creamy starter that goes perfectly with this savory champagne.
The main course of duck is accompanied with apricots, cooked gently to a confit. The overall taste has a tart side that will accentuate the notes of jellied fruit and ginger on the palate that characterize Tsarine By Adriana champagne.
For dessert, I couldn't resist my own favorite cake, which is also the French cake par excellence ─ a Saint Honoré, made of slightly caramelized puff pastry combined with a crème Chantilly. The visual effect alongside the golden fluting of the bottle is superb…
All through the meal, I advise serving Tsarine by Adriana at a temperature of between 10° and 12°C.”
