For your New Year’s Eve festivities, Isabelle Tellier, Head Wine-Maker of the House of Chanoine Frères and a devotee of fine cuisine, has come up with a holiday menu especially designed to accompany Tsarine Rosé:
Starter
Salmon tartare and avocado
Main course
Filet of pike perch and Champagne lentils
or
Stuffed quail with cranberries
or
Rolled filet mignon with pear
Dessert
Moelleux Champenois
(a new specialty of Épernay — a light rose-colored biscuit made with marc de Champagne)
or
Pavlova with red fruits
or
Fruit macarons

Tsarine’s Rosé cuvée has been classed as one of the eight best rosé champagnes in the world. The wine, based on a perfect balance among Chardonnay (34%), Pinot Meunier (33%), and Pinot Noir (33%), best expresses its qualities when served at between 8 and 10°C.
Head Wine-Maker Isabelle Tellier says of it “The fragrances and flavors blend in an aromatic whirlpool of red fruits where notes of strawberry and red and black currant swirl together. The meticulous balance brings power and structure to this rosé cuvée.”
