Chef de Cave Tellier ages Tsarine Blanc de Blancs for more than four years in the House's cellars in Reims to allow its rich palette of aromas and flavors to develop fully.

“The mineral dimension provided by Chardonnay subtly pairs with the briny taste of fish and crustaceans. I've chosen a light main course – haddock is a North Atlantic white fish with fine flesh and delicate taste; it's also easy to cook. Exotic fruits like the mango that accompanies the grilled lobster entrée and passion fruit with the dessert provide a fresh tartness that reinforces the notes of lemon and candied citrus found in the nose and palate of Tsarine Blanc de Blancs.
