Summer Pleasures with Chanoine Frères Réserve Privée Brut Rosé

Reims, August 2021

An expressive rosé champagne with lovely notes of red fruits

Réserve Privée Rosé is a champagne of character whose temperament comes from the Pinots Noirs that make up 63% of its blend, a creation of Isabelle Tellier. Of these Pinot Noir grapes, mainly grown in Les Riceys, 9% are vinified as red wine and give this rosé champagne its ruby tint.

Isabelle Tellier, Chef de Cave of the House of Chanoine Frères and creator of the Réserve Privée line, says “Blending this rosé is a delicate operation. I always make several tests. I work towards balance between the red and white wines and a lovely color, with well-integrated tannins. I also aim at bringing the fruit notes to the fore.

The fine, subtle nose indeed offers scents of wild strawberries, raspberries, and other red fruits. On the palate the wine reveals a fine balance between velvety and robust. Réserve Privée Rosé is a lively, fruity, fresh, generous champagne.

Pleasures of summer

Réserve Privée Rosé should be served at between 8° and 10°C — a slightly colder temperature than for the other cuvées since, according to Isabelle Tellier, freshness must predominate in the mouthfeel.

Is freshness what you yearn for this summer? Then savor Réserve Privée Rosé with light cold dishes! Our Chef de Cave is a food lover, an expert in food-wine pairings, and she suggests accompanying this lively, fruity rosé with spring rolls, sushi and sashimi, or salmon in all its expressions, whether verrines, tartare, or carpaccio.

And for dessert, strawberries are the ideal marriage, whether in a tart or a shortcake. Or to be slightly more adventurous, an association with mango is an interesting choice — why not in the form of a delicate mango macaron?

Réserve Privée Rosé can also accompany a chocolate cake to celebrate a birthday with friends this summer. Isabelle willingly admits: “Harmonizing with chocolate works well, even if it’s not a personal favorite of mine. I prefer the way this rosé goes with desserts based on red fruits!
