A blanc de noirs champagne is a wine exclusively made with red grapes whose pulp is white. Chanoine’s Blanc de Noirs is a blend of 65% Pinot Noir and 35% Pinot Meunier.
In this blend, Chanoine gives special precedence to Pinot Noir grapes from the finest parcels — Les Riceys in the Côte des Bar and the Montagne de Reims. Chanoine Blanc de Noirs champagne is an emblematic cuvée of the House, a structured and powerful wine, full-bodied and long.
Isabelle Tellier, Head Wine-Maker, gives us her tasting notes for Chanoine Blanc de Noirs:
“Its color is gold with amber highlights. Its nose is charming and intense, revealing flavors of candied fruit with notes of ginger and licorice. On the palate, the fine, robust structure is evident, with spice and coffee flavors emerging, making Chanoine Blanc de Noirs a champagne that is both rich and smooth.
Preferably it should not be drunk too cold — at between 10° and 12° C — to allow the full wealth of its flavors to develop.”
Chanoine Blanc de Noirs is a champagne of character, ideal for accompanying a meal from start to finish. This is a robust champagne that can marry well with full-bodied dishes.
Head Wine-Maker and gourmet Isabelle Tellier says: “This is a champagne you can take to dinner! You might start by pairing it with Serrano ham or rabbit terrine with prunes. Then, for the main course, Chanoine Blanc de Noirs will go well with a Bresse hen stuffed with porcini and morel mushrooms, or even a tournedos Rossini. For dessert, it will raise a simple apple clafoutis to new heights of sparkle.”
