Mardi Gras or Fat Tuesday — the day before Ash Wednesday and the beginning of the penitential period of Lent, which leads up to Easter — will be celebrated on 1 March this year. French tradition calls for enjoying fried pastries or beignets on Mardi Gras before Lent and its fasting begin. In Champagne, the pastries are called faverolles or frivolles.
Mardi Gras is also the final day of Carnival, with its costumes and masking and parades and cavalcades in the streets of many towns in France — from Nice to Dunkerque and including Menton, Limoux and Douarnenez, to mention only the best known.
Mardi Gras is also a day for families to gather among generations and prepare all kinds of fried-dough sweets for the delectation of the younger members.

Chanoine Héritage Demi-Sec, a rich and delicious champagne
Made from Pinot Noir and Meunier grapes, Chanoine Héritage Demi-Sec is a Blanc de noirs champagne, with a sugar dosage of 34 gr/l, bottled in 2017. Ageing in the House's cellars makes Héritage Demi-Sec a vinous, structured and unctuous champagne, with a fine balance (see the tasting notes).
This champagne, with its roundness and sweetness, goes perfectly with desserts. It makes the perfect accompaniment for all Mardi Gras beignets — which, depending on the region, are called bugnes or faverolles or pets de nonne, oreillettes, and yet other names. It also goes well with other sweet treats such as a pear tarte amandine, a Paris-Brest or a tarte Tatin.
