In developing Tsarine Blanc de Blancs, Isabelle Tellier, Chef de Cave, chose the finest Chardonnays from the celebrated Côte des Blancs south of Epernay, where the grand cru villages of Avize, Cramant, Oger and Le Mesnil sur Oger are located.
Tasting notes for Tsarine Blanc de Blancs
Its pale gold colour with subtle emerald highlights sets off the fine, delicate effervescence with a lasting sparkle.
The nose is fine and highly precise, beginning with fresh, floral aromas of linden and hawthorn accompanied by notes of candied lemon, then giving way to subtle roasted flavours.
The wine is lively and silky on the palate with aromas of pineapple and candied citrus, ending on the mineral notes typical of Chardonnays from the Côte des Blancs. The slightly spicy and saline finish prolongs the pleasure.
Isabelle Tellier’s Christmas seafront menu, perfectly matched to Tsarine Blanc de Blancs
For the Christmas holidays, Isabelle Tellier has designed a “seafront menu” that plays on pairings of land and sea. The minerality of Tsarine Blanc de Blancs, which comes from the Chardonnays that make it up, does marry well with the bracing sea flavours of fish and shellfish.
“It’s a seafront menu with scampi tartare as the starter — very easy to prepare — and sea bass as the main course. I’ll serve this delicate fish with a champagne sauce (set aside 25 cl), ideally using Tsarine Blanc de Blancs, but you can use Tsarine Premium if you want to keep every drop of the bottle of Blanc de Blancs to enjoy during the meal. I’ll accompany it with an original idea: watercress purée. It’s not something that spontaneously springs to mind, but it’s easy to do and full of vitamins, and its delicate taste won’t overwhelm the sea bass.”
“For dessert, I’ve chosen a bûche done with exotic fruits. Mango and Yuzu — a lemon with a pronounced taste — will exalt the aromas of candied citrus Tsarine Blanc de Blancs expresses on the nose and palate.”
